The Untitled series from One Eight Distilling was created to play around with different whiskeys and cask finishes. They are released periodically and sold through the distillery or select bars and retailers. No. 7 is their first cask-strength release. It is a blend of three different bourbons --- a 9 year-old high-rye bourbon sourced from MGP, a 6 year-old wheated bourbon, and a 4 year-old Tennessee whiskey-- all finished in port and cognac casks. It's bottled at a hefty 57.7% ABV.

Tasting Notes

"The cognac and port finishes create an elaborate disguise that nearly swallows the whiskeys beneath. The nose is a shallow chalice of mead with a shot glass of nutty fino sherry resting inside. The palate starts out juicy but shortly moves to a hot and dry finish. The primary notes are lychees, Manzanilla sherry, and vanilla. There is a flash of creamy hazelnut before the high proof reveals itself on the finish. Adding water embellishes the mead aroma and makes for a sweeter mid-palate."
