Ransom Spirits in Oregon collaborated with spirits author, David Wondrich, to produce this classic gin that was popular during pre-Prohibition times. Made from a grain bill of corn and barley (of which 85% is malted and 15% is unmalted), it's distilled through an alambic copper pot still.
The organic botanicals used are juniper berries, orange peel, lemon peel, coriander seed, cardamom pods, and angelica root. After a 6 to 12 month aging period in French wine oak barrels, the gin is bottled at 44% ABV.

Old Tom GinThis style is not legally defined, but in general, this style of gin is mildly sweet and is not juniper-forward. It falls in between London Dry Gin and Genever in terms of sweetness level.

Tasting Notes
"Look for a light amber color in the glass, thanks to its time spent in barrel, and a soft, floral aroma underlined by juniper and orange peel. On the palate, it's like a gin and whiskey hybrid in which gin gets the top billing. You'll taste top notes of juniper and cardamom, while the barley spirit from which it's distilled provides a rounded base. This would be equally nice on the rocks as would substituted into traditional whiskey cocktails like the Old Fashioned or Hot Toddy."
