Revivalist Gin Solstice Expression

In completing Revivalist Gin’s seasonal range, we have Solstice. Like all of their gins, fermentation occurs in custom Douglas Fir wash backs and the spirit finishes in custom CARL copper pot/column still hybrids. To combat cold winter nights ginger and anise are used and more uncommonly there is an infusion of dried cherry. Before release the spirit gets a stay in oak barrels that previously held red wine.
Barrel-Aged GinGin which spends some time in barrels, generally not more than a few months at a time, although there is no legal definition for this style.

"The color is a bit of a mysterious rust hue, but unfortunately that is not the only misstep in this wintertime gin. The tones of spicy ginger and sweet-cherry butt heads with the toasty oak and other botanicals to create a pileup of non-congruent flavors. Perhaps simply a case of too much of a good thing, but ultimately a spirit without focus. A shame because the rest of the Revivalist lineup is quite good and inventive."
