Like all of Sagamore's non-cask strength whiskey, this is proofed down with naturally filtered spring water from a limestone aquifer. Cognac Finish is a distillery-exclusive expression released in a batch of approximately 1,000 bottles, with all proceeds benefiting the Ellicott City Partnership's (ECP) flood relief and rebuilding efforts.

But if made in the US, the mash bill recipe must be at least 51% rye and it must be aged in new, charred oak barrels with no age requirement. Elsewhere, the rye whiskey will be made keeping the country of origin's rules regarding the recipe and minimum aging.

Tasting Notes
"The rye shows in several different ways on the nose, with mint, licorice, and spice together with apples and honey. The palate is soft and slightly creamy, with vanilla pudding, tannic and spicy oak, wine-soaked fruits, and a herbal side of thyme and oregano. The finish is short, with grapey-fruit jammy notes, bitter dark chocolate, and pistachio shells."
