Santiago Queirolo Acholado Pisco
Santiago Queirolo // Peru
This Acholado (or blend) pisco is comprised of four grapes: italia, muscatel, quebranta, and negra criolla. All of the grapes, with the exception of the negra criolla, are aromatic grapes, which is exactly what they sound like: grapes which provide a fragrant aroma, particularly with floral and fruity notes.
PiscoBrandy distilled from grapes and produced in either Peru or Chile. In Peru, there are eight allowable grapes and in Chile, there are three. Peruvian Pisco is distilled only once in a pot-still and no wood aging is allowed. Peruvian pisco cannot have any alterations including dilution. Chilean pisco can be distilled multiple times, can be aged, and can be diluted prior to bottling.
"This is a pisco you really have to spend some time with in order for the aromas and flavors to reveal themselves. Once you do, the fruit aromas (peach, apricot, green grapes) begin to come out. The pisco is soft on your palate and clean with a little herb flavor (think refreshing green herbs rather than dried, twiggy herbs). This would be best enjoyed at cellar room temperature so that the nuanced aromas and flavors can be enjoyed."
