Spring44 Old Tom Gin
Old Tom Gin
Spring44 // Colorado, USA
As the rich golden color confirms, Spring44’s take on an Old Tom Gin is barrel aged.
The Coloradans individually distill organic juniper, toasted coriander, orris root, galangal root, fresh grapefruit peel, fresh rosemary, and lemon grass before aging the blend for 2-4 months in toasted American oak barrels.

Tasting Notes
"The nose shows a good amount of toasty oak character with hints of piney juniper and other more earthy botanicals. Besides color and aroma, the barrel aging has created a rich gin with a mouth-filling character that reads dense and whiskey-like. The combination of the agave nectar and barrel vanillin gives a fairly sweet palate that finishes long with waves of earthy and toasty herbal and citrus elements. Certainly not for your dry martinis, but a very interesting stand-in for Bourbon and completely enjoyable on its own."
