By the Dutch celebrates the traditional spirits of the Netherlands, a country considered a hotbed of quality for distillation in Europe back to the 17th Century. Small detail, the By the Dutch distillery was started in 2015. That hasn’t stopped them from turning out authentic takes on some of the Dutch’s best spirits of yesteryear like Genever and the rum-like Batavia Arrack.
For the Genever a combination of pot and column distillation are employed to a rich grain base of rye, corn, and malted barley. This base is married to distillates of juniper and other botanicals currently thought to be classic in gin. Aging in oak adds another dimension of flavor and a beautiful, light golden color.

GeneverGenever is a juniper-flavored spirit which combines a botanically-flavored, neutral spirit with a maltwine. Only made in Belgium, the Netherlands, and in specific regions of France and Germany. Jonge genever is made with a maximum of 15% maltwine. Oude genever uses at least 15% of maltwine. Korenwijn genever uses at least 51% of maltwine.

"This is a delicious, textbook example of the Genever category. The aromatics show a great combination of assertive grains, subtle but expertly balanced botanicals, and a delicious touch of toasted wood with a hint of honey graham cracker. The palate is rich and luscious and flavors of citrus play a refreshing foil to the distillate’s sweet grain and oak tones. This is an immensely drinkable spirit to be drunk on its own in a Scotch glass, but intrepid bartenders will have a blast recreating America’s classic, golden age cocktails from yesteryear with this authentic, modern take on a historical gin style."
