Utilizing the nearby brewery Cascade Brewing Co, Sullivan’s Cove uses fine Tasmanian barley and double distills in copper pot stills. It then barrels the whisky for a minimum of 11 years and, for this expression, utilizes one used French port barrel and two American oak bourbon barrels.
As you can probably guess from the number of bottles, each bottling is a vatting of one port cask and two bourbon casks. It seems that they are particularly fond of bottling on or near exact barreling anniversaries, which is a bit unusual.

Tasting Notes
"This expression is probably the easiest drinking of the three expressions. Ripe orange zest and vanilla in the nose and fore palate lend to an interesting spiciness similar to candied ginger. The mid-palate lends more to the French port cask and becomes zestfully sweet in a hazelnut and bitter chocolate finish. "
