Sun Rum Barrel Aged
Sun Liquor // Washington, USA
Seattle’s Sun Liquor joined the American craft distillery movement in 2011 and produces a number of products, including vodkas, gins, and two rums--a silver and this Barrel-Aged. Both rums start with fresh cane juice from the U.S. and the Caribbean. After a ten-day fermentation, they’re double-distilled in a small pot-still. The Barrel-Aged version then spends two years in a number of different barrel types, including bourbon and sherry.
Aged RumRum that is aged, but no specific type or size barrel required. No set time required for length of aging, but will often carry an age statement (which should be taken with a grain of salt). Often thought of as "sipping rums".
Cask Typeex-bourbon, sherry
"The rum presents in the glass with a light straw color. The nose leads with strong hints of banana and Juicy Fruit gum. The initial taste explodes with more of that Juicy Fruit flavor before segueing into a somewhat Jamaican-like note. As it opens up a bit, a hint of eucalyptus develops in the finish. There’s relatively little wood influence, e.g. vanilla, to be found. Although primarily a premium mixer, it’s surprisingly smooth to sip at 94 proof, despite the lack of sugar."
