Tailwinds Distilling was founded in Illinois by entrepreneurs Toby and Jamey Beall to form a unique American spirits company that goes against the "grain" (meaning producing something other than whiskey.) Taildragger White Rum is made from first-boil molasses, rather than the usual blackstrap variety, with the goal of giving it a more agricole-like quality. The rum is fermented for a period of up to 5 days and manually adjusted during the distillation process to ensure desired style and flavors.
Silver RumAKA Blanco, Light, White. Rum that is usually aged (but not always) and carbon-filtered to remove any color. No specific type or size barrel required. No set time required for aging for most countries with a few exceptions.
"Big, bold flavors of vanilla and butterscotch are the the fore. There's a pleasant viscous quality one doesn't usually find in an American white rum, as well as some sophisticated notes of citrus, grass, brown sugar and pineapple. Most white rums are meant for mixing, but this is a fine sipper on its own merit."
