Tequila Cabeza Blanco
Los Altos, Jalisco, Mexico
This tequila hails from Arandas in Jalisco at the El Ranchito Distillery owned by the Vivanco family, fifth generation agaveros. The agaves are sourced from their own estate which they grow from the "hijuelo" stage (baby shoots) to maturation at 7-9 years of age. The piñas are cooked for 24 hours in 100 degree ovens. Champagne yeast is used for fermentation which occurs only in the winter months. This allows an extended mash period and a fruitier distillate.
Tequila BlancoDistilled from 100% blue Weber agave, it is typically unaged , clear, and bottled straight after distillation. Sometimes rested in stainless steel up to 60 days and can also be aged in wood for no more than 30 days.
"The nose is initially tame, perhaps some lime and mint are detected. As you continue to nose and taste, however, the fruit factor really kicks into gear. Lots of ripe tropical fruits are found, almost to the point of a little bit of funk. It skirts the edge nicely. The palate isn't too oily and the finish shows a bit of acidity to prepare you for the next sip. This tequila makes you sit up and take notice."
