Tequila Gran Dovejo is located in the Highlands of Jalisco and produces only single-estate tequilas. The agave plants are grown by a fifth-generation agave grower in Los Altos.
The piñas, or hearts of agave are harvested by hand and then roasted in clay ovens for 36 hours. The piñas are then shredded, the juices extracted and fermented and then double-distilled in copper alembic stills before being aged between six and nine months in American oak barrels which are hand-selected by the Master Distiller to evaluate maturity.

Tequila ReposadoDistilled from 100% blue Weber agave, it is aged from 2 months up to a year in barrels no larger than 20,000 L. Any type of wood is acceptable, although ex-bourbon barrels are most common. Reposado translates to "rested".

"A delightful bouquet with cinnamon, roasted agave, white pepper, mango and roasted pineapple lead into similar flavors on the palate. This is a very complex tequila, with pineapple, mango and papaya fruit complementing the agave, pepper and cinnamon notes. A hint of caramel flan and oak make an appearance midway through, before a medium finish of cinnamon, baking spice, and toasted oak ends things."
