Virginia Moon White Whiskey

Each batch of this white dog is made with 600 pounds of Virginia wheat, 300 pounds of Virginia rye, and 100 pounds of malted barley. The grains are milled in-house and mashed in a 550-gallon mash tun. The mash is then fermented for 4 to 5 days before it is twice-distilled It is bottled at 90 proof.
WhiteDistilled from a cereal mash bill comprised of any grain(s), must age at least briefly in oak for an unspecified amount of time.
"Mostly raw distillate on the nose, but there's some underlying notes of juniper, cherry and wheat. On the tongue, it's pleasingly sweet and not nearly as hot as expected. The warm, almost white chocolate creaminess on the palate continues into the relatively short, yet cool finish. This is not a burly, harsh moonshine. It's rather round and smooth, indeed."
