Vizcaya Rum VXOP Cask No. 21
Aged Rum
Vizcaya // Dominican Republic
Hailing from the Dominican Republic, Vizcaya is one of Oliver & Oliver’s product lines, alongside Cubaney and OpthimuS. Surprisingly, this rum is made from fresh cane juice rather than molasses, making it an agricole-style rum in the vein of Clement six-year Grande Reserve. The “21” proudly centered on the Vizcaya label gives the impression of 21 years, but look closely and it says “Cask No.
21,” with no age statement provided. It’s aged in ex-bourbon barrels and bottled at 80 proof. The squat, oval shaped bottle and gold stopper create a sense of elegance.

Tasting Notes
"In the glass, the Vizcaya presents an inviting, dark gold coloring. On the nose is crème brûlée and toasted oak. Once sipped, it has an initial burst of sweetness, segueing into mild oiliness, almost like an old Caroni rum from Trinidad. The mid-palate flirts with mineral and menthol before fading somewhat quickly. Despite the initial sweetness, which typically indicates added sugar, the mouthfeel is slightly thinner than you might expect. There are interesting flavors for sure, but this rum would benefit from coming in at a higher proof."
