Waterford Dunmore Edition 1.1

The nose is grassy with a dried hay semblance. Underneath are the darker notes of sun dried oak. The entry is straightforward with a sharp crispness of oak cask and perfectly balanced malted barley. There are a lot of keening high notes on the mid-palate with the wood taking control after a minute. The body is medium-light and the finish is long, but with a subtle ending on an fresh apple note. A lovely whiskey that demands several sips to fully grasp its delicate complexity.

Cherry, strong aroma, vanilla. Really nice aroma. Flavor is a little different with some spice/smoke tones, chocolate. Very flavorful and light.

The nose is not your typical Irish, I get some salt and citrus, maybe a hint of grass. The taste presents some more traditional notes and reminds me a lot of what I get with Green Spot, specifically some green apple on the finish. Up front on the taste, though, is a little bit of a sour twinge that dissipates when the sweet apple takes over. It’s hard to describe it, but it mirrors closest to that salt on the nose and reminds me a bit of sourdough bread or grains. It’s very interesting, but not likely one I’d buy again.

Aroma is a touch waxy, but the dominant character is a butteriness that stays consistent and prevalent and brings with it a nice balance to the earthier and fruitier notes; Palate is a bit more raw and malty, but retains that buttery feeling though it’s sweeter here giving it a buttercream frosting character; Finish is soft, sweet and subtle as it drifts out sweetly.
