Reviewed August 31, 2020 (edited November 14, 2022)Haven’t had a pour of this for 8 months...found it in the WAY back of the collection...and for good reason. I must have told myself THEN that i liked this so much...hide it in the back so i don’t finish the bottle! This is an easy sipper, especially for a rye. The nose is invitingly sweet. Rich and sweet on the tongue, also leaving your lips with the sweet taste. There is a mild spice, but no burn. Mouth left feeling a bit dry, which compels you to go in for another sip! -

Reviewed August 30, 2020This and Noah’s Mill are VERY SIMILAR. it’s been about 6 months since i had my Noah’s Mill bottle so i can’t tell you the differences, but i sipped this and it immediately came back to me. The flavor profile is identical. The nose is candied spice. If there was ever such thing as “herbal fruit” this would be it. It’s a mix between rye spice, bourbon spice, and tropical fruit. What makes this better than Noah’s Mill is that it’s got less of a candy flavor to it. I remember after 2-3 glasses of NM i would almost feel sick, like i ate a bag of sugary candy. This Willet Rye brings out those fruity, sweet flavors but balances them perfectly with Rye and Whiskey. All and all this is one of the best bourbons I’ve ever had. This is a more balanced version of Noah’s Mill. If NM is easier to get or cheaper to get i would start there to get an idea of what this is like. -

Reviewed August 29, 2020 (edited December 9, 2020)Uncorking - Nose- Rye. Like straight up rye in a way I have never had so pronounced before. Almost medicinal. Candy. Like a cough drop or syrup. Flavor rye spice is strong again. Along with some golden raisins. Almost a syrup wine note in there, like a port, towards the end. I would have guessed this was finished in wine barrels. It's flavor and nose remind me of scotch beers like Irish Death. There are some identical notes in the palate. Maybe a bit of hard candy snaps but not ginger. Something else. Finish is lots of fruit. Dark roasted cereals. Some gentle smoke and oak light on the edges from the barrel. First whiskey I have tasted pineapple or mango in. The fruit is strong in the end. Worth really chewing on as more and more develops. Definitely falls into the interesting category and one of the more unique drams I have poured. It's quite good even if it or maybe because it defies it's category.
