Tastes

Nose is vanilla, green apple tart, sawdust, black pepper. Taste is caramel, tart green apple, a little citrus, slight chalky mouthfeel, oak and almost a hint of brine. Tart apple lingers on the palate but not for very long.

Nose is sweet, maple, deep dark and rich, cocoa, chocolate covered cherries and a hint of new shoe leather. Taste is maple, bright tingly citrus, lemongrass, backend is a little bitter and the leather comes through. The citrus and sweet maple lingers a while on the palate.

Nose is honey, maple, oak, prunes. Taste is oak, black pepper, prunes, rye spice. Finish is tingly from the proof, bitter oakiness and sour prune linger.

Nose is surprisingly not overwhelming for such an insanely high proof. Very very sweet cotton candy smell, some oak, walnut, ethanol at the end. The walnut smell is more pronounced retronasally. Taste is extremely alcoholic, oaky, nutty, bitter needs a splash of water for sure. After a splash of water, burnt caramel, bitter nuttiness, almost ashy flavor, and a little orange citrus. Palate is very tingly, burning from proof, oaky and bitterness linger.

Nose is caramel, oak, sour cherries, and chocolate. Taste is an initial alcohol burn, very sweet caramel, cherries, oaky sawdust. It leaves behind a chalky mouthfeel and a numbing burn from the high proof.

Nose is very sweet butterscotch, some raisin, light sawdust. Taste is a light, gentle honey sweetness followed by a huge tart raisin flavor, and a citrusy finish. Finish is easy and the flavor doesn't really linger very long. I can't tell this is a port finished bourbon.

Nose is cherries, caramel, toffee, figs. Taste is a pretty strong oak flavor, simple syrup, lots of cherries, light and crisp finish. Finish is nice, light and fruity with a little oak and burn that lasts a short while.

Nose is molasses, saw dust, peanut shells and a sour note. Taste is oaky, molasses, briny, and a bitter almond. The palate is oily but not long lasting with oaky and bitterness.

Nose is green apple, burnt caramel, walnuts oak. Taste is Carmel, oak, buttery, citrus, cherry on the end. Oak and cherry remains on the palate.

Nose is sweet honey, cinnamon, citrus, light. Taste is gentle, honey at the front, transitioning to burnt caramel, followed by saw dust, cherries and orange citrus. Light on the palate with tingly cinnamon and citrus.
