Tastes

Nose: Strawberry, fig, turf, oak, light peat. Palate: Stewed strawberry, walnuts, caramel, malt. Finish: Long, sweet peat. Water opens up the berry notes into more varied fig and raspberry, enhances the oak, layers in some leather, and softens the peat finish, which is still savoury and long. Overall, quite a unified dram. Canadian Craft Cellars cask select: Cask 1970/2013, Filled 4.4.2013, Bottled: 15.9.2020.

Nose: Honey, Meyer lemon, sweet grass. Palate: Bright lemon, malt, sweet dessert wine, pineapple. Finish: Sweet, balanced; medium length.

Nose: Grape jelly, caramel. Palate: Grape jelly, Saskatoon berry, hint of black pepper, and peat; slight blood orange note. Finish: Smooth, dry, peat.

Nose: Vanilla, lemon custard, shortbread. Palate: Lemon meringue pie, cane sugar, butterscotch and pear smoke. Finish: Long, smooth, and smokey—terrific!

Nose: Honey, bright malt, dandelion tops, sourdough bread, walnuts. Palate: Strong honey sweetness, candied lemon, slightly metallic, but buttery; light burn. Finish: Medium-length lingering lemon and peat.

Nose: sweet strawberry, raspberry; demerara and peat; light salt air. Taste: sweet strawberry and seaweed; buttery, with strong demerara and medium wood smoke. Finish: sweat, peaty, and oily; slightly tannic and leathery. Overall: very unique dram with a number of wildly different, distinct notes. Touch of water opens up the acidity in the fruit flavours and highlights the oak. Excellent character for a five-year-old single cask. -Cask 322/2015, bottled for Craft Cellars (Canada), 58.6% ABV.

Nose: sweet orange and candied ginger; strong toffee, with grain in the back. Taste: smooth and sweet; lots of orange marmalade; stewed peaches; slight cashew; excellently balanced. Finish: long, smooth, and sweet. An excellent dram.

Nose: Strong peaty notes of black pepper with hints of leather; green apple an iodine. Palate: Oily with caramel and peat; butterscotch and sultana; faint pepper. Finish: Very well-balanced; smooth and peaty, though not smouldering; relatively short but not disappointing—slow fading embers. Overall: A really pleasant dram. Would be nice to try a few different variations as it ages.
