Kilchoman 100% Islay Pedro Ximenez Single Cask
Single Malt — Islay, Scotland
Reviewed January 13, 2021 (edited February 18, 2022)Nose: sweet strawberry, raspberry; demerara and peat; light salt air. Taste: sweet strawberry and seaweed; buttery, with strong demerara and medium wood smoke. Finish: sweat, peaty, and oily; slightly tannic and leathery. Overall: very unique dram with a number of wildly different, distinct notes. Touch of water opens up the acidity in the fruit flavours and highlights the oak. Excellent character for a five-year-old single cask. -Cask 322/2015, bottled for Craft Cellars (Canada), 58.6% ABV.Surrey -

Reviewed January 12, 2021 (edited May 18, 2021)Nose: sweet orange and candied ginger; strong toffee, with grain in the back. Taste: smooth and sweet; lots of orange marmalade; stewed peaches; slight cashew; excellently balanced. Finish: long, smooth, and sweet. An excellent dram.Surrey -

Reviewed September 7, 2020 (edited April 23, 2021)Nose: Strong peaty notes of black pepper with hints of leather; green apple an iodine. Palate: Oily with caramel and peat; butterscotch and sultana; faint pepper. Finish: Very well-balanced; smooth and peaty, though not smouldering; relatively short but not disappointing—slow fading embers. Overall: A really pleasant dram. Would be nice to try a few different variations as it ages.Surrey -
