Waterford 1st Cuvée Pilgrimage
Single Malt — Ireland
Reviewed October 9, 2021 (edited October 11, 2021)[LOOK] Deep straw [NOSE] Powdery floral fresh grain, sweet straw, faint honey glaze, soft, not highly pronounced but soft and eager [PALATE] Sweet entry of honeyed grain that segues into fusel-y bitterness, fennel bitters, faint pear, sweetens up into unripe orchard fruits with rancid butter [FINISH] Ends with a classic ashy wisp, good balance of heat, ginger, and singed barley husk [MOUTHFEEL/NOTES] Soft entry, delicate until bitter and fervent mid palate, low burn and grain forward finish, excellent Irish whisky. Could have used more approachable fruit, but for what I believe they are going for, solid! -
[LOOK] Faint gold [NOSE] Delicate malty and nutty nose, sweet barley, toasted almonds, faint caramel, a surprising touch of vanilla bean and oak. Well contained and round. [PALATE] Grainy and cereal forward, with real interesting breathy and zesty fruit candy notes on the mid palate, fading into a [FINISH] toothpicky, woody, & rough finish. [MOUTHFEEL] Pretty solid until the late palate/finish where the light body & low ABV lose the battle to the abundant oak and youthfulness. Not a bad whisky but I wouldn’t pay more than $30-35 for this. Could see it doing okay in a highball or as a WTF outlier in a club whisky blind. I don’t normally review stuff anymore, but it’s Thanksgiving.35.0 USD per Bottle

Reviewed July 25, 2018 (edited January 28, 2021)[LOOK] Blush rosé [NOSE] Plum skins, drying figs, touch of sherry rancio, cerezas negras, wildflower honey, real inviting acidity [PALATE] Honeysuckle explosion balanced by apricot purée, stone fruit juice, honeycomb, and well maintained saddle leather, incredible movement from sweet fruit to acids to supported dry notes of gentle leather and beeswax [FINISH] Sweet, grape-y, medium length, clean, no heat, faint wet stone, Riesling-y, alpine spring water minerals, delightful [MOUTHFEEL] This whiskey sings at such a low proof, never is there a sense that it is out of balance or lacking any essential quality, the acidity is superbly well integrated with the latent fruitiness of the malt, fruit esters, and overall sweetness, devastating to learn there are only 4200 bottles -

Reviewed May 18, 2018 (edited August 11, 2020)[LOOK] Sturdy amber, pretty lovely [NOSE] Pastry glaze, orange slices in rose water, milk tea bubble tea, oversteeped sweet tea, tarte tartin, lots of lightly caramelized fall fruit flavors, sprinkle of lemon juice [PALETTE] Starts with a pinch of bitterness, then stewed apricots & peaches, followed by yellow skittles, a pinch of vanilla, sour grape skins come and go, a very lively fruit masquerade ball, ends with a subtle and welcome stemmy tannin bitterness [FINISH] Acidic and juicy, acidity fades and fruit juice is the last thing tasted [MOUTHFEEL] Much lighter than expected after nosing, delicate, gentle, unbelievably fulfilling and fun -

Reviewed May 16, 2018 (edited January 28, 2021)[LOOK] 7% Mead [NOSE] Chaussons aux pommes, grape juice, warm pastry, light oak/vanillin, bit of earthy nutmeg & fresh cinnamon [PALETTE] Beautiful story that starts with pale malts, buttery scratch biscuits, and wanders through gentle spices, lemongrass, fennel lozenges, wisps of smoke, and ends with ginger chews and bitter lemon peel, Anjou pear slices [FINISH] More lemongrass, ginger, and asiatic herbs dominate, long and pleasantly floral, pungent [MOUTHFEEL] Firm airy structure, dynamic and well developed, elegant interplay of predominate notes -
