Reviewed February 10, 2021 (edited December 15, 2021)Nose: Apple, light fig, almost phenolic and Smokey. Shortbread cookie. Lemongrass. Icing sugar. Taste: vanilla, fig, bright red wine. Water brings out dirty floral notes like honeysuckle and hay. A generic wine sweetness throughout. Strong blonde caramel espresso. Lemon and grapefruit. -

Reviewed February 10, 2021 (edited August 5, 2022)Nose: dark honey, fig, sherry, Taste: heavy malt, iodine sherry funk, almost pickle juice. Cherry, heavy oak Water opens it up immensely. Fruit cake malt. Floral, violets, roses, rich honey. Dark chocolate, espresso, Taste turns into intense oak and fruit cake with orange icing. Herbal notes come out as well. -

Reviewed February 3, 2021 (edited February 8, 2021)Nose: Licorice, grapefruit, kiwi. An intense dark red wine. Bitter chocolate. Espresso. Mocha. Strong oak influence is apparent. Caramel. Toffee. Red apple. Plum, flower blossoms, Pepper, malt come out after a while Taste: shortbread cookie, crisp fresh red apple. Very sweet and bright citrus finish, almost like a sugared tangerine. Strong typical Irish herbal after taste. Slight banana bread as well. Water brings out the typical tropical Redbreast fruits of mango, guava, starfruit, and durian. Rye — Distilled in Canada, finished in Vermont, Canada
Reviewed February 1, 2021 (edited November 21, 2021)Nose: dill. Dirt. Vanilla cream soda. Black pepper, light green apple. Cigar smoke. Brown butter, butter cookies. Toffee and baking spices. Time in the glass reveals more herbal qualities such as mint, thyme, and rosemary with a bread quality. Almost a little sweet lemon and honey. Taste: anise, dirt, vanilla cream, heavy oak burn. Light dill. Allspice cinnamon. Light citrus and dirty cigar smoke. Finish devolves into dark chocolate coffee and mocha and a kind of aged dark red wine tannin. Water intensifies the oak, herbal, fruity and spicy aspects without ramping down the other flavors. Finish turns into a tense oak and hot pepper bomb but it never gets too unbearable.250.0 USD per Bottle -

Single Malt — Islands, Scotland
Reviewed December 28, 2020 (edited June 14, 2021)Nose: Dense malt, apple, red berries. Cream, soft cherry, oak. A lot more muted than the 10. Taste: denser smoke with intense wine characteristics. Dirty burnt grass, hay. Sherry is helping to amp up the smoke. Light creamy finish with a hint of grapefruit. Nose awakens once you prime yourself with a sip. More almond and cherry notes pop out. The peat starts to subside to a more subtle smokiness and becomes very sweet with toffee and powdered sugar notes. Water makes the malt come out and it becomes very sweet and almondy with the peat punch moving to the end. 10 is more malty and fruity on the taste. Honestly the 10 is more complex but 10 years old is too young, it’s too punchy. Adding water makes it lose its complexity. The distillers edition rounds off the rough edges. It reminds me of uigedal. Definitely need to spend more time with this one but it’s getting up there in terms of my favorites so far.90.0 USD per Bottle -

American Single Malt — Texas, USA
Reviewed December 26, 2020Nose: Watermelon that has been left in the garbage for months but also the garbage is on fire. The salted tears of a widow. Light caramel banana. Vanilla ice cream. Taste: Wet cardboard that has been used to dry a dog. The chocolate center of a Tootsie Pop. Dense moldy rye bread. Adding water somehow turns the nose into christmas spice and candy canes, with that fake Christmas flower scent. Taste is still the same except there is more oak and the cardboard taste intensifies. Why does this exist please just get Brimstone instead. -

Single Malt — Highlands, Scotland
Reviewed December 25, 2020 (edited February 22, 2021)Nose: deep honey and fresh ripe apples and pears with hint of light caramel. Strong citrus notes of a variety of fruits (yuzu, grapefruit, lemon). Malty fruit cake with a hint of raisin. Light zing of a fresh wooded vine. Taste: Heavy malt and sherry upfront with a strong woody backbone. Light floral notes with honey and vanilla. Water is almost required as it solidifies the nose into sweet citrus notes. The taste turns into mild oak and honey with citrus and sharp sherry collapsing into strong floral notes.180.0 USD per Bottle
