Nose has vanilla, barrel char, apple fruitiness, and spice. The palate is deep and earthy with black pepper and spice with a bit of vanilla and caramel. I get char and a bitter taste like the bitter in dark chocolate, but only the bitter notes. There is a lot of char in the finish and a healthy dose of spice (maybe orange and cloves?) There is a dry, astringent, smokiness.

Reviewed August 31, 2019 (edited November 15, 2019)Sweet very floral nose - this smells absolutely wonderful - I get a bit if Rose's and spice with some charcoal/barrel notes. The palate has some fruity floral notes typical of the Weller family. There us a rich caramel flavor on the tongue that evolves into burnt brown sugar. It's very floral with barrel notes. I get a bit of butter, apples, spice, with a long dry finish with fruit, wood, and burnt brown sugar. -

Reviewed August 29, 2019 (edited August 30, 2019)Having a hard time with the nose - maybe toast and a hint of banana? Baking wheat bread? There is a bit of mint on the nose. Strong vanilla flavor, quite minty. Considerably more spicy than I expected, it has a bit of a black pepper bite, especially on the finish. Someone mentioned bubble gum, I do kind of get that flavor- like the old kind that you'd get in a pack of baseball cards. I also get a little banana along with that, maybe like a banana bread. The finish is dry, I feel like the mint lingers into the finish. Definite whole wheat toast in the finish. Enjoyabale, but not anywhere close to what I was expecting. It has quite a bit of spice, despite not having tons of rye. -

Reviewed August 28, 2019 (edited January 26, 2022)Let it sit for 15-20 minutes to let all the flavors come out. I get a lot of flavors from this - maraschino cherries, brown sugar, a spicy rye bite, a hint of mint, some vanilla, cookie dough. This whiskey has a long woody, char, rye finish. This is a great whiskey- it's almost worth the price. I enjoy it quite a bit, but I'm not sure that I'd buy another bottle at the ~$200 price tag unless I had a sudden windfall. -
I definitely get peanuts and fruit from this. I agree that it's a tropical fruit, but I can only say that generically- maybe a little bit pineapple or mango... maybe even coconut? It's subtle and blended- it's like a generic tropical flavor, though not artificial. This is easily drinkable. My only real complaint is that I wish the whole thing was bottled at higher proof, Bottled in Bond would make this a perfect daily drink in my opinion. Pretty pleasant and reasonably complex for the price. It's also accessible- I feel like I could introduce someone to bourbon with this.

WhistlePig 6 Year PiggyBack Rye

Reviewed August 21, 2019 (edited January 25, 2020)I generally think that Whistlepig whiskeys are decently good, but quite overpriced(an $80-$100 whiskey that's worth about $50). This one actually bucks that trend, in that it is reasonably priced ~$45 and it actually tastes like something should in that range, maybe even like something a bit higher. This has a strong, sweet rye nose. It is spicy with a lot of rye flavor - I get a bit of vanilla, rye grain, some pepper, dry woody notes with some green herbal flavors, and a good amount of heat. It has a strong rye finish with more wood and some char. I like this, and I'd buy it again. This is pretty much what I'm looking for in a solid mid range rye. -

Reviewed August 21, 2019 (edited November 30, 2019)Nice smokey nose with plenty of brine. The palate is a smoke cloud that rolls in over the water and sticks around. Dry salty smoke lingers into the finish- this is a great whiskey for the price, and it elevates itself above a cynical cash grab. Drown your sorrows about the trainwreck of the final GoT season with this fantastic whiskey!!! -
Strong caramel nose. The palate has a strong caramel flavor - it's also got a sharp bite of spice, far spicier than I was expecting from a wheat whiskey. It has a sharp black pepper bite. It feels a bit thin for my taste, but it's a pleasant and easily drinkable whiskey at a pretty reasonable price. The finish is dry with a bid of astringent woodiness along with some cereal notes. This isn't particularly complex but it's enjoyable for a change of pace.

Knob Creek 9 Year Single Barrel Reserve

Reviewed August 19, 2019 (edited August 28, 2019)The nose is fruit and oak. On the palate I get quite a lot of spice, butter, and apple. This is very hot without water, but not in a bad way. It's hard to identify the heat. With a splash of water, the nose opens up a bit showing caramel and spice, wood, and perhaps a light hint of vanilla. The butter and spice is even more pronounced with a splash of water. It's still hot, but the hotness is more cinnamon and pepper than ethanol. The apple is still present but I get a bit of char and rye now.
