No long review notes this time. Only to say that this glass is enjoyed more than the first now that I am aquainted... This 375ml bottle is good for one more night like this, which may be months from now. The next occassion for downtime will again be quality time with Knob Creek... I do believe we are friends now... -

Reviewed September 21, 2019 (edited January 31, 2020)December 22nd 2017. So tonight, I am having dinner, and decided to review Knob Creek. I ordered a neat one, and my gorgeous waitress brought me a double... First Nose: This immediately got my attention as a good all around Bourbon... Sweet aromas of corn and oak char .. and hint of cherry, First Sip: Smooth, sweet, and I can feel and taste the alchohol burn but it is still pleasant on the toungue. The oak finish lingers and transitions to a bitterness.. and fades into an oily creaminess. 2nd Nose: More cherry... Less oaky... 2nd Sip was a little larger... Chewed it a bit... May have been too soon for that... Left me with a kind of an astringent after taste on the outside edges of the toungue... This is real Kentucky Bourbon... It is very good, but a bit strong on the deeper darker notes and that is usually considered a good thing. Molasses hints come out after a few minutes... 3rd Nose: More cherry, molasses cookies... Some carmel... 3rd Sip: Its growing on ne... Still a little heavy on alchohol, but it reminds me of a bakery... Freash bread and cakes... Carrot cake... -
Rich and delicious... not for bourbon newbies... Can’t compare it to any other bourbon... It’s uniqueness is meant to be shared... its a group try thing... more fun that way... I recommend a 375ml bottle for up to 6 people for a fun group tasting. I don’t want a bottle for myself... it’s just too big and bold and hot... but a very good experience to have shared with my friends.

So this is quite nice in my opinion. It is surprisingly smooth, sweet, and tasty. Enough wood, subtle spice. Easy to chew. There is a signature that only Jim Beam has in their flavor profile which I do not know how to describe other than ‘Jim Beam Taste’, and I am not sure that is redeeming, as much as unique. I think it must have something to do with the yeast they use in the fermentation steps. Overall, I like it.

FUNNY, I never really had this... WHEN I Ordered shots it was always Jameson, and when I ordered neat, it was always high brow stuff, and at parties, there was always something else to try. I admit rejecting Jim Beam as a bottom shelf budget bourbon, but a neat pour was handed to me, and I tried it... “Hey this is really nice, what is it.” ‘Jim Beam.’ “WOW... no kidding?” A few weeks went by. An open bar at an event offered JB or Jack, so I ordered Jim Beam and really enjoyed it with a nice plate of cheese and bread. I think this is going to become a staple in my home bar now... space is limited, so I will finish one of those existing bottles before I have room... OBVIOUSLY NOT a high priority purchase, but this could become one of my favorite daily sippers. No kidding...15.0 USD per Bottle
