More floral blossoms emerge, with just a touch of white pepper and clove before a soft, short finish.

The nose is floral and fragrant, with lavender, vanilla, grass, hay, and all types of underlying fruits, such as raspberries, peaches, and apricots. The palate is oily and mouth-coating, with more vanillins, fruits, and floral notes. A touch of heat starts the finish leading into rose water and lychee, with citrus zest and black pepper. A final bitter note is the only knock keeping this from excellence.

Caravedo Mosto Verde has a slightly funky, earthy aroma but is otherwise mild. Its flavor is also rather subdued, with a bit pf mustiness and a touch of sweet, ripe fruits. It has a warming sensation that lingers.

Look for a lovely nose of pears, peaches, papaya and a slight florality. It has a silky texture on the palate. Flavorwise, there are bright, vivid floral notes of orange blossom and rosewater, alongside green banana. This would work wonderfully in a cocktail, particularly a sour.

Delicately aromatic, with hints of roses, green almond, bergamot, and dried papaya, there is a good amout of complexity here to pick apart. Soft and delictate in the mouth, there is no perceptible alcohol heat, but the flavors are somewhat lifeless compared to the nose's considerable promise. An attractive leafiness emerges on the end.

This straw-colored, lightly aged pisco greets with pleasantly floral notes on the nose. These continue onto the palate, along with a vibrant fruity character accented by just a hint of vanilla. This is a spirit to win over skeptics of Chilean pisco; it's delightful, and an absolute steal at the price.

There's an elegance found on the nose with rose petals (and the green leaves of the flower) and red fruit. The aroma is nuanced and not in-your-face. The flavors follow suit with a gentle cooked pear and amber honey sweetness. The finish is herbal (think shiso/perilla leaves) and a hint of green olives. This is a stunning pisco and worth the trip to Peru to get.

Light vanilla, lime peel, and white pepper make up a very light nose. On the palate, white pepper, vanilla sugar, wet cement, lime, yuzu, and cinnamon make up a fairly straightforward presentation. There is a nice peppery bite at the end and a bit of earthiness present as well. The finish is quick, leaving the palate ready for another sip.

Campo de Encanto Barkeep's Whimsy Pisco

Enanto's Barkeep's Whimsy was designed to bring the aromatic torontel grape to the fore. It certainly succeeds on that score; it's an intensely aromatic pisco, with notes of citrus peel and coriander seed. It's very bright on the palate, a touch less sweet than Encanto's standard release, and quite fruity. Bartenders will indeed have fun playing with those aromatic notes in cocktails, where this pisco will be a delight. Barkeep's whimsy is a welcome addition to the pisco landscape in the United States.

Rustic and full of character, this is all about the earthy, resinous side of Pisco. Pine needles, cedar-closet-planks, and some faint gasoline aromas, almost suggest a funky aromatic grappa, if not for the signature dried apricot and sultana raisins on the palate.

Campo de Encanto Grand and Noble Pisco

Campo de Encanto is an elegant and fragrant Peruvian pisco. The aroma brings to mind flowers, stone fruit, and apricots. Delightfully soft on the palate, it is floral, fruity, and multi-layered, and a ready complement to citrus and spice in cocktails. It's rare to find an unaged spirit that is this complex yet this smooth and approachable.

BarSol Supremo Mosto Verde Italia Pisco

Distinctly herbal, resinous notes emerge from brooding, cerebral spirit. Saffron, laurel, and amaretto give way to a sensation of the palate that borders on medicinal, almost suggesting a pomace brandy rather than one made from wine. Texturally cohesive and obviously well-made, but lacking in cheery, vibrant fruit, this is not for Pisco beginners.
