Buffalo Trace White Dog #1

Very odd for sure! Expected a moonshine kick in the nuts and it’s anything but that. Smells like sweet kettle popcorn. First sip is sweet corn with a hint of a vodka like finish. Thick mouthfeel too! It was fun to try this though!

Sweet in the back end of the palate. Definitely get corn in the background

First bottle-proof I've ever had. It's fun tasting the raw elements before it's barreled. Sweetness of the corn, warm bread of the yeast, subtle fruity quality. Thick oily mouth feel.

So bad.

Aged my white dog in a 2L barrel for 87 days, came out at 68% ABV and I proofed it down to 55%. Lots of vanilla on the nose with some corn, maybe not yet baked cornbread. Was surprisingly velvety on the palate where the rye spice also makes an appearance. Finish fades fast but is not at all unpleasant. Would like to try this experiment again and let it age a bit longer to see what happens.
