First bottle-proof I've ever had. It's fun tasting the raw elements before it's barreled. Sweetness of the corn, warm bread of the yeast, subtle fruity quality. Thick oily mouth feel.
Aged my white dog in a 2L barrel for 87 days, came out at 68% ABV and I proofed it down to 55%. Lots of vanilla on the nose with some corn, maybe not yet baked cornbread. Was surprisingly velvety on the palate where the rye spice also makes an appearance. Finish fades fast but is not at all unpleasant. Would like to try this experiment again and let it age a bit longer to see what happens.
easiest way to describe this unaged gem is its whiskeys vodka.....smooth, slightly (slight) sweetness, and definitely dangerous by the proof...crazy to think of all the great ones that come from this mash...i've only gone neat on this one but let's say smooth vodka that'll put you on your ass!! 🥃🔥(375ml / +-$25)
