Glendalough, known for their whiskeys and poitín, entered the gin game in 2014 with seasonal gins, one for each season. Glendalough Wild Botanical Gin, launched in early 2017, brings all four seasons together. Their plan is for you to smell the spring, taste both the summer floral and autumnal fruits, and finish up the experience with spices reminding you of winter. A host of wild botanicals are foraged by Geraldine Kavanagh and they are used fresh, not dried in the distillation process.
Modern GinAlso has been referred to as "Contemporary", "New Western", "New Wave", and "New American". This style is not legally defined. In general, this category of gin, while it does contain juniper, places less of an emphasis on this botanical. Other botanicals not classically used in London Dry gins are often utilized and often highlight botanicals grown in the region the gin is produced. Most produced as either London Dry or Distilled Gins.
"Tasting Glendalough Wild Botanical Gin is like falling down in the woods. Flowers greet your nose along with freshly felled juniper and pine needles. The palate is soft and oily. Chewy peppercorns and juicy juniper are the primary flavors. On the second and third taste there’s orris root and bitter citrus as well. All these flavors are bound quite tightly. Best let them unfold in some tonic."
