This is a great textbook example of a classic Highland tequila and is actually from one of the highest elevation distilleries in Mexico and sourced from agave grown in some of the highest elevation plantations in Jalisco.
The higher pressure, thinner air and cooler climate of the Highlands make for long growing cycles and bright citric and vegetal flavors.

Tequila BlancoDistilled from 100% blue Weber agave, it is typically unaged , clear, and bottled straight after distillation. Sometimes rested in stainless steel up to 60 days and can also be aged in wood for no more than 30 days.

"As one might expect the nose is vegetal with artichoke and freshly cut sugar cane along with lemon curd, salt and star fruit. The palate brings a little more spice and body with burnt cinnamon, green beans, sweet potatoes, lemons, caramel and black pepper. The ripeness of the agave lends a subtle but creamy texture, not typically found in tequilas at this price point. There’s a long clean and fresh finish with a lot of vegetal character."
