    Neat from a freshly opened bottle: Nose is agave, citrus, grassy, floral, herbal. Hints of tarragon and anise. Touch of clean ethanol keeps it bright, but not harsh. Very pleasant. Taste is sugar cane, agave syrup, citrus, tropical fruits, fresh green herbs such as tarragon, cilantro, anise, and mint, hint of cinnamon. Finish is fairly short, mild sweetness, mild cinnamon, and a bit tart. Moderately thin mouthfeel and no burn This may be my favorite highland blanco yet. It has all the nice, pretty, bright and fruity flavors, and then adds some light herbs and a tart finish that adds a lot of complexity in just the right amount. I haven't tried the more aged varieties, but I'd be afraid the wood would mask these wonderful flavors. Superb Value IMO

    Predominantly sweet and smooth. Sugar cane and citrus round off into more grassy, herbal notes such as mint, cilantro, and parsley. Outstanding!
