Reviewed July 23, 2024A complex, Single Pot Still Irish Whiskey by Terry Cross founder of Hinch Distillery in Ballynahinch, Northern Ireland made from a mix of malted & un-malted barley with the addition of 3% to 5% oats to mash bill while the bulk is matured in bourbon casks, though a small portion spent its time sherry casks. It has an aromatic birth with notes of porridge & cream with lime zest & cinnamon & melted butter; while a creamy life adds notes of warm oatmeal raisin cookies, lemon curd shortbread biscuits & mint; that leads to a long & dry death with notes of peppery oak, citrus zest, sherry, rancio, & a prickle of spice. Reviewed November 20, 2021Easy drinking, no off flavors but not a lot of complexity in the palate. For a single pot still I'd hope for a bit more of a full flavor profile. I'm enjoying this for sure, but for the cost and compared to the competition on price and flavor complexity? Not great.
