Oola // Washington, USA
Oola Distillery was established in 2011 in Seattle's Capitol Hill neighborhood. This is a grain-to-glass distillery and they produce vodkas, whiskeys, and aged gin. Here they take their unflavored vodka which is wheat-based and infuse 13 botanicals, including hibiscus, coriander, lemon thyme, dried rose and black lemons. This is sold in both 375ml and 750ml sized bottles and is available in several markets across the U.S.
Modern GinAlso has been referred to as "Contemporary", "New Western", "New Wave", and "New American". This style is not legally defined. In general, this category of gin, while it does contain juniper, places less of an emphasis on this botanical. Other botanicals not classically used in London Dry gins are often utilized and often highlight botanicals grown in the region the gin is produced. Most produced as either London Dry or Distilled Gins.
"A lot of spice, particularly cardamom and coriander, along with floral notes are found on the nose with the juniper playing a minor role. These botanicals play nice with each other without throughout the tasting experience with the dark spices bringing the gin to a close. The 47% ABV helps the gin have some snap and it will stand up in cocktails such as the Negroni with its bold flavors. A Bee's Knees cocktail is also nice especially if you have a flavorful dark honey. "
