Opened for my 27th birthday. Extremely complex. I’ve had a couple pours across a few days and it’s opening up already. Extremely deep fruits. The tannins are apparent; it is a bit dry like a wine, but without the full mouth feel. It has the characteristic Redbreast oily texture with just a ton of flavor. It is very good.
Nose: sweet, smooth,
Taste: light cinnamon taste, smooth taste of stone fruit. Has notes of peach, almost reminding me of fuzzy peaches. Subtle notes of vanilla
Finish: finish is long lasting
Only had a small sample, but I was extremely impressed with Redbreast 27. This is by far the oldest spirit I've ever had. It was sweet and smooth, and the fruit notes the finishing gives are warm and delightful. Not sure I'll have another opportunity to sip this one, but I'm certainly happy to have had this pour.
Baked apple, honey, walnut nose; tons of stone fruit, brown sugar, and crème brûlée; long, smooth finish with dry apple pie, oak, and burnt sugar; thicc, very smooth, rather sweet
