Nose: The sweetness of maple syrup, vanilla, honey, and honeydew melon are immediate but there is also some black pepper and a light amount of mint. The nose creates an anticipation for a sweet sip but the spices hit hard coating the back of the throat in a pleasant burn. The sweetness of maple syrup, and vanilla are strong with honey and burnt sugar also apparent. The flavors linger for an eternity, but the burn is fleeting making this a very well balanced whiskey and worthy of purchase. Well done Signal Hill.
