St. George Terroir Gin is an American gin made with a dozen botanicals inspired by California, including Douglas fir, California bay laurel, and coastal sage.
Fir and sage are distilled separately to preserve their character, while juniper and bay laurel are vapor-infused and the remaining botanicals, including wok-roasted coriander seeds, fennel seed, and Seville orange, are distilled in a copper pot still. Produced at St.

Modern GinAka Contemporary, New Western, New Wave, or New American. Not legally defined, but juniper is not the dominate flavor. Often made with botanicals not historically used and/or sourced locally.
Tasting Notes
"The bold aroma of the Douglas Fir really comes into play along with sage which makes itself more present as the drink goes on. Juniper is on the low scale of things and citrus isn't to be found. Full, not too slick this gin has a peppery back note. A Gibson martini seems fitting or a Bramble cocktail as the blackberry in the Bramble would be wondrous with the sage."
