St. George produces three distinct gins. Their Terroir Gin aims to highlight the forest and earthy flavors of the state of California.
They do this by using a dozen botanicals including local California bay laurel, Douglas Fir and coastal sage, the latter two they distill individually. As for the others, the juniper and bay laurel get placed in a basket to be vapor-infused while the remaining botanicals are placed in the pot-still. This is sold at 45% ABV and is available in 750ml or 200ml sized bottles.

Modern GinAlso has been referred to as "Contemporary", "New Western", "New Wave", and "New American". This style is not legally defined. In general, this category of gin, while it does contain juniper, places less of an emphasis on this botanical. Other botanicals not classically used in London Dry gins are often utilized and often highlight botanicals grown in the region the gin is produced. Most produced as either London Dry or Distilled Gins.

Tasting Notes
"The bold aroma of the Douglas Fir really comes into play along with sage which makes itself more present as the drink goes on. Juniper is on the low scale of things and citrus isn't to be found. Full, not too slick this gin has a peppery back note. A Gibson martini seems fitting or a Bramble cocktail as the blackberry in the Bramble would be wondrous with the sage."
