Still Austin Bottled in Bond Straight Rye (Spring 2024)
Rye
Still Austin // Texas, USA
The fourth and final seasonal bottled-in-bond bourbon from Still Austin is a Straight Rye Whiskey. It's made with 100% Texas-grown rye — the same mash bill recipe as the brand's The Artist Straight Rye. It follows the bottled in bond regulations so it's the product of one distillation season from one distiller, is aged for at least 4 years in a federally bonded warehouse, and is bottled at 100 proof.
Barrels were selected by Head Distiller John Schrepel and Master Blender Nancy Fraley. Available for purchase online and at select retail locations in March 2024. (SRP $79.

RyeUnlike bourbon, rye whiskey can be made anywhere in the world. But if made in the US, the mash bill recipe must be at least 51% rye and it must be aged in new, charred oak barrels with no age requirement. Elsewhere, the rye whiskey will be made keeping the country of origin's rules regarding the recipe and minimum aging.
Tasting Notes
"The aroma isn't super expressive, but what's there are notes of warm spices green herbs, and black tea. The taste is moderately full with a hearty mix of grains and a mild cherry menthol flavor. It's dry and a bit tight on the palate, but it's not too rough. The flavors at the finish are on the bitter side. It's not quite ready as a sipper, but if priced lower would suggest for cocktail use.
