Svöl Swedish-Style Aquavit
Svöl // New York, USA
The brainchild of Gunnar Gíslason, chef and owner of Michelin-starred Dill Restaurant in Reykjavik, and Jonas Andersen, Beverage Manager for MeyersUSA, Svöl Aquavit is made at New York Distilling Co. in Brooklyn, NY. It launched in 2019 with two expressions. The Swedish-Style Aquavit is made by infusing seven botanicals, including caraway, dill, coriander and lemon verbena, in a neutral spirit made from rye, corn and barley.
AquavitAquavit (aka akvavit) is a predominantly caraway and/or dill flavored spirit made using a neutral spirit base distilled from potatoes or grain. Other botanicals can be used and it can be aged, but neither are required. Traditionally made in Scandinavia, but can be produced anywhere.
"This aquavit starts off with bright aromas of lemon verbena and dill, with a slight sweetness. On the palate, there's a strong spice flavor followed by light, but distinct fennel and caraway notes. The palate fades into a licorice-like tingle. "
