Made from molasses and aged in used Bourbon barrels, it carries an age statement of twenty-one years.

Made from molasses and aged in used Bourbon barrels, it carries an age statement of twenty-one years. Zafra (which means "harvest" in Spanish) was originally introduced in 2010.
"Moving past the initial astringency, the primary aromas are of fruit (orange, cherry and pear), with a hint of toffee supported by an oak foundation. Beyond the oak is a distinct sherry note and a bit of dust. The rum enters smoothly before being balanced by a bit of spice. Subsequent sips reveal the citrus and some prune, but it's as though the entire affair is soaked in sherry. The finish is dry and woody, but the sherry note carries the day. While by no means terrible, there are enough signs to give one pause about this rum. After twenty-one years in a barrel, one would hope for more complexity, but the finish is one-note and generally uninteresting."
