Tastes

Nose- a deep caramel, some burnt orange and heavy barrel char. Ethanol was almost non existentaftwr 20 minutes of rest Taste- initial hit of sweetness, burnt sugars and caramel bun. Followed by wet oak and a grassy note that reminds me of a high rye bourbon. Nice spice level to boot. Really well balanced and drinks below its proof Finish- long finish with baking spice, orange zest, cinnamon rolls and barrel influence lingering Thoughts: so damn good. Killer balance of sweet and spicy with just the right amount of oak influence

Nose- citrus zest, pine and clove. Nice barrel influence but the astringency reminds me of an oaky cleaning spray Taste- sweetness dominant from the start. More citrus plus dried mango, peach rings and tropical punch Finish- grassy, tannins add some bitterness and dryness

Berries, spicy oak, vanilla frosting

Age: 10y 5m ABV: 57.2% Nose- really enjoyable. Deep red fruits and a nice balance of spice Taste- spicier than the nose, black pepper, really nice oak notes and barrel influence, hints of creamy marshmallow and strawberry Finish- long and on the sweeter side. Really pleasant!

Age: 10y 9m ABV: 53.1% Nose- killer nose, dark fermenting fruits, caramel candies, rye seems pops in at the end Taste- definitely more spicy than the nose led on. Cinnamon, deep caramel, more red fruits and a hint of banana Finish- long, spicy (cinnamon and peppercorn) My favorite recipe of the four I’ve tried.

Age: 11y 7m ABV: 53.5% Nose- floral and citrus Taste- really soft mouthfeel, but the flavors are bold. Dried cherry, minty sweetness hint of rye spice Finish- on the lighter side but pleasant. Pear, cherry and more mint hanging around
