Honey, drying spices. This is young whisky hiding behind some cask finish. It’s not terrible, but it must have been stuck in young bourbon or virgin oak because the harshness of the oak makes this hard to drink (even for me). I like the honey note and some spice, but ultimately, i think this needs more time in the cask - or more char on the barrel. Probably my favorite mezcal I have tried to date. Best part was that they didnt have enough for a full pour so gave it to me for free. There’s a distinct umami flavor that is pleasant and not overbearing. There are some faint floral notes and a pleasant vegetal sweetness.
