Reviewed June 9, 2020 (edited January 1, 2021)Deep Amber in color Aroma dark caramel, Rye spice in the second row, but very present. Very floral and lots of dark fruit. Flavor, great blend of deep caramel infused with black pepper, cinnamon & a touch of clove. Finish is awesome and warming. This does NOT drink like 120 proof. Wow. Dark bready notes with complexity due to the spice notes. Really enjoying this. Somewhat oily and vanilla continues to emerge as glass opens. Found this at an airport restaurant and could not believe it. Let's just say that I was pleased. -
Peerless 3 Year Kentucky Straight Rye

Reviewed June 7, 2020 (edited August 11, 2023)Aroma of some vanilla, herbal notes (mint) and some cedar sweetness present. Flavor screams Rye and is salty, vanilla, almond, Cedar. Opens to honey and amped up vanilla and then marzipan opens very nicely. Be patient with this in the glass. Interesting in that it seemed almost too salty early, but this comes into balance. (salted caramel kind of thing. (I did taste next to Whistle Pig 10 year and WP won by a good distance) -

Reviewed June 6, 2020 (edited July 9, 2020)Absolutely wonderful. Aroma is caramel and dark fruit. Perhaps fig or date. Flavor was sense, the right sweetness and opens quite nicely. Caramel and cocoa later turning to dark chocolate resonated with me. Same dark fruit notes from the Aroma appear in the flavor with again with dates. A drop of water opened this up nicely and had some additional spice notes and complexity come forward. This was really nice. -

Reviewed June 6, 2020 (edited July 1, 2022)Enjoyed this so much and now it's a favorite. Nose was glorious and the flavor didn't let down at all. Nose had notes of Rye, touch of Dill, but more cinnamon and red berries. What I perceived as raspberry in both Aroma and flavor. There was awesome depth to the flavor that was both raspberry and cinnamon with some nice spice notes. This was a nice journey through the glass. I will seek this out again. -
Elijah Craig 23 Year Single Barrel Bourbon

Reviewed June 6, 2020 (edited July 29, 2020)(bottled 4/7/17 barrel 83) Deeper amber in color. The Aroma was a mix of Almond and Spearmint. More oak continues to emerge as it opens. Overall an earthy sweetness here. Nice dark fruit in the flavor and a good amount of oak, but not too much. It seemed to get more savory as I spent time with it. Later in the glass vanilla takes center stage. Honey at the end. Really nice, but slightly short of epic -
Mellow Corn Bottled in Bond Whiskey

Reviewed June 4, 2020 (edited July 22, 2020)After hearing such fun things about Mellow Corn I had to try it. Boy am I pleased that I took this step. Just fun to drink. Sweet corn and vanilla first in aroma and some buttery notes. Flavor took me around to Buttered pop corn, Kettle corn, very light caramel and vanilla. Quite buttery on the tongue Really a pleasure. Water was nice here and brought out more vanilla. I'll come back at some point. -
Had the opportunity this evening to try this '15 next to the' 16 version. Both were wonderful and, frankly, I went back and forth as to which I preferred. In the end, I pick this '15 by a nose. The aroma immediately hit me with Spearmint and then caramel apple, reminds me a little of the Aroma of an Amaro. Flavor fantastic. Deep caramel with slight banana Foster in the background. Honey late and I finally realized that I was tasting some tobacco. Single drop of water brought out some black pepper. I would not add a drop of water here (but do with the '16) A touch more complexity here and more depth of spice. Happy to have had the chance to try this.
