Nose: Mocha with sherry influenced citrus Palate: Light and refined but not lacking a supple milk chocolate creaminess Finish: Balanced nicely between the aforementioned mocha and citrus. Finding myself finishing it was longer lasting. A nice little sipper, even if the finish leaves a bit to be desired.65.0 CAD per BottleWine and Beyond Sage Hill #757

Nose : Dark Chocolate and Walnuts Palate : More Chocolate, creamier on the palate than on the nose. Strong barrel influence, a classic Highland style malt Finish : The waves of Chocolate continue and finish with a touch of baking spice at the end. A solid, Chocolate-y malt that continues to be solid if you are in the mood.50.0 CAD per BottleWine and Beyond Sage Hill #757

J.P. Wiser's Red Letter Canadian Whisky (2015 Edition)
Canadian — Ontario, Canada
Reviewed December 1, 20212013 Edition. The nose reminds me of Granny's rum balls, Christmas cake, and the expected Wisers caramel. On the palate, more rum soaked baking, and loads of thick, viscous caramel, very reminiscent of an older Wisers, some wood in the background, perhaps pine needles. The finish is longer than expected, and is very caramel and butterscotch dominant, but it does show some cinnamon and clove as well. This is a great bottle for winter, I miss some of these old wisers releases.110.0 CAD per BottleWine and Beyond Sage Hill #757 -
The nose has punchy brine and smoke paired with a sweet milk chocolate. On the palate its sweeter than expected, with juicy bursting pear and apple grilled on an outdoor BBQ. The milk chocolate is a lovely background player throughout. The finish brings black pepper spice, cured meat and more of the milk chocolate, perhaps a pepperoni rolled in melted milk chocolate? The liquid shows its age a bit, but still manages to be a solid daily drinker for the peated fan.70.0 CAD per BottleWine and Beyond Sage Hill #757

Old Forester 1920 Prohibition Style
Bourbon — Kentucky, USA
Reviewed November 6, 2021 (edited November 19, 2021)The nose is a perfectly bold marriage between barrel and ethanol, with just the tiniest touch of cherry on the backend. On the palate, bold barrel smoke and the 57.5 alcohol punch are balanced by the unmistakable note of vanilla buttercream. All three work in tandem to keep the whiskey both interesting and balanced. On the finish the buttercream subsides and leaves the barrel spice and a pleasant tingle of heat that is bold, long-lasting and memorable. Superb for the price and an absolute must for any overproof bourbon fan.75.0 CAD per BottleWine and Beyond Sage Hill #757 -
Glenmorangie A Tale of Cake
Single Malt — Highlands, Scotland
Reviewed April 7, 2021 (edited December 1, 2021)Nose: Surprising amount of the tokaji finish, which likely adds to the sweet, icing note. Diving deeper, baking spice appears, maybe cinnamon (?). The nose is very well balanced out by an appealing note of white chocolate. Palate: Even more wine influence that highlights lots of fermented fruit which is paired with a very prototypical glenmorangie mouthfeel that finishes off a little thin. Finish: Again, very Glenmo. The white chocolate shows again. Finishes Sweet, too much for me, but I can understand the draw for some people. I've never really been a glenmo fan and this dram unfortunately isn't much different. The nose was really interesting, unfortunately the liquid fell a little short for me.110.0 CAD per BottleWine and Beyond Sage Hill #757 -
Nose: Vanilla and toffee with dried fruit hiding in the background. Palate: Seemingly endless waves of butterscotch, vanilla shows through with some water. Finish: Even more vanilla, sweetness from the rum barrel rounds out the dram nicely. One of the few rum barrel whiskies I enjoy, still continues to be solid for the price.38.0 CAD per BottleWine and Beyond Sage Hill #757

Nose: Less demerara than expected. Loads of mushroom, and mossy, musty wood. Palate: Huge note of BBQ smoked mushrooms caps, with even more smoke to spare. Finish: The demerara finally shows, more mushroom and a very creamy finish round out the rum.55.0 CAD per BottleWine and Beyond Sage Hill #757

Nose: Very light, the floral notes hide in the background and caramel is highlighted. Palate: Lovely bit of rose, minimal salt. Rose is definitely the star. Finish : Even more rose comes through, seaweed, very crisp finish. I wish I got a little more kelp/sea salt from it, but well done nonetheless.55.0 CAD per BottleWine and Beyond Sage Hill #757

The nose gushes with fresh blood orange as does both the palate and finish. The juniper adds a nice balance throughout. I found the backend a tad harsh straight, but it could be easily masked in any cocktail. My only complaint is that the big juicy notes could be limiting if you are wanting use it for cocktails.45.0 CAD per BottleWine and Beyond Sage Hill #757
