The nose was definitely interesting. Different from anything ive ever nosed before. Heavy roasted pear dusted with cinnamon. Light vanilla and caramel were also present. The palate was as interesting as the nose with syrupy sweetness, brown sugar, molasses and stewed fruit. There was a hint of clove and anise as well. The finish was decent with a tart candy, oak and cherry pipe tobacco

Balcones True Blue Cask Strength Single Barrel Straight Corn Whisky (Spec's)
Corn — USA
Reviewed May 30, 2023The nose starts with a peachy funky cheese. Sounds bad but smells delicious. Once it sits for a good long while, vanilla, tobacco and tannins come though with a bit of fresh cut white oak The palate starts with a good bit of heat and pepper that evolves into straight up vanilla, overripe peach/apricot and leathery tannin. The taste becomes more complex as it sits as well with some baking spice, cinnamon and clove The finish is decently long with pepper, tobacco and brown sugar showing up at the bottom of the glass Very happy with the purchase and experience! -
Bunnahabhain 12 Year Cask Strength (2022 Edition)
Single Malt — Islay, Scotland
Reviewed April 29, 2023 (edited April 30, 2023)Tasted in a James Bentley double walled glass, neat. The nose shows the sherry influence immediately with dark stone fruits and raisins. The longer it sits, the greater the influence. There seems to be a bit of brine and pepper as well. The palate is pepper, baking spice especially clove. The sherry notes lead to plum and dark cherry. The brine also follows the nose. The finish is long and a little dry. Im not detecting a sweet note. What I am getting is long, old-charred wood with slight hints of rhubarb and more pepper. A truly great dram! -

Salty sea air and malt start the nose off with white pepper, hints of iodine and brined fruit following The palate follows the nose with salty, peppery, savory goodness. The malt follows along with over ripe apples and stewed pears The finish depends on the chew. The longer you chew, the better and longer the finish with a hint of vanilla lingering as well Talisker 10 should be paired with a nice steak or lamb especially if you want to experience surf with your turf!75.0 USD per Bottle

Lagavulin Offerman Edition Charred Oak Cask
Single Malt — Islay, Scotland
Reviewed October 22, 2022 (edited March 3, 2023)On the first pour, the nose was a little thin until it sat and breathed for a while. Betting the nose improves greatly once under the shoulder. After about 15-20 minutes, the nose opens up with what only can be described as Applewood Smoked Bacon. There were dark cherries and blackberry notes coming through as well. The peat smoke was muted but definitely present with light iodine, bandaid and phenolic notes. The palate was also thin at first and thickened through to the bottom of the glass. The berry notes started things off with green apples and salted butter following right on the heals. Vanilla and caramel were up next. Reminded me of roasting apples on a campfire then wrapping with caramel. The mouthfeel improved greatly and became buttery and more oily as the dram diminished. The finish was interesting with new notes of star anise, citrus and smoked bacon rounding things out. I truly anticipate this whisky improving over time. -
The nose is light and fruity with pear, raisins and a vegetal presence. Steamed kale maybe? Once it sits in the glass for a while, a greener note of hay and tart apple show up. The longer it sits, the more floral the nose becomes. After the glass is almost gone and has sat for 20 minutes, a floral/powdery hand soap is faintly detected. The initial palate is very ethanol forward but not overwhelming. It’s a bright ethanol not heavy at all. The mouth feel is a little thin but pleasant. Initially, I got roasted pear and dark raisins. As it sat in the glass, apples became prevalent and became more tart the longer it sat The finish is a little like powdery sweet tarts and a very young and light unpeated scotch. There is a bit of white pepper on the finish as well. Overall, very much worth the price I paid and a strong recommendation for any first timers wanting to dip their toes into drinking whisky neat!38.99 USD per Bottle

George Dickel 13 Year Bottled in Bond Tennessee Whisky (Fall 2008)
Tennessee Whiskey — Tennessee, USA
Reviewed October 4, 2022 (edited October 20, 2022)Lucky find at Twin Liquors - Katy/Fulshear Bend The nose is very corn forward with sweet cream and cloves added in. As it sits in the glass, vanilla and caramel start to waft out The palate starts with baking spices of clove, nutmeg and cinnamon. Mid way through, a black walnut essence shines through. Dark chocolate and caramel show up more and more as the glass sits as well The finish is peppery citrus almost like a toasted Meyer lemon with vanilla and caramel closing it out. Definitely a sweater than normal finish One of the better Tennessee whiskeys I’ve ever tasted. Was worried that the Dickel chill-filtering process along with the 13 years of aging would make this whiskey a little too rounded and mellow. However, was pleasantly surprised with the strong complementary flavors that were just sharp enough to keep things interesting! Edit - I’m just below the shoulder now and this bottle continues to improve. The citrus notes continue to be enhanced as well as the nutty black walnut flavor (which I really like). I’ve enjoyed this bottle so much, I purchased another one!42.99 USD per Bottle -
The nose is interesting with a vegetal, herbal and slightly smokey presence. The palate follows the nose with the addition of sweet synthetic oil and alkaline minerals The finish is toasted tobacco, cinnamon and more green vegetal and herbs I actually liked this expression over the oak aged. This sotol was very direct where the aged version was having a tough time figuring out what it was. The oak aged was a little easier to drink but also much less interesting39.99 USD per Bottle

The nose reminds me of poking cloves into an orange at the holidays as a child. There are other citrus notes of lemon, lime and grapefruit. There are also hints of pine, mint and fresh burdock root The palate starts ethanol and almost ether heavy but calms down after resting in the glass for 15-20 minutes. The citrus notes come though as orange peel muddled in malic acid. Cloves, cardamom and hints of cinnamon also come through The finish is pine nuts and bitters along with a hint of white pepper. This sets the bar for Gin!
