From the label, it is known that the distillate comes from Cabernet grape pomace (it can be Cabernet Sauvignon or Cabernet Franc). It would probably be made from Cabernet Sauvignon, because This grape is common in Italy. With the drastic changes in the climate, where periods of drought and rain have become unstable, Destom has put together a strategy using sugar cane as an energy reserve in the event of extended dry periods. This made it possible to increase the number of animals per unit of pasture area. From there, it was a quick leap to set up the distillery and close the sustainability cycle on the farm in Faria Lemos, Minas Gerais, in this consortium between beef cattle, sugarcane and cachaça. The use of exotic spices in gin was made possible by imports from Africa and Asia. Gin’s prevalence around the world is due to sailors setting foot in new cities and on new continents. We have all heard about the rum rations in the navy. Unknown to a lot of people is the fact that, while the enlisted men subsisted on rum, Royal Navy officers drank gin. The practice of issuing alcohol rations in the navy started sometime in the 16th century. It started with beer, and sometimes vine and ended up with rum and gin. The practice of issuing alcohol rations was abolished in the Royal Navy in 1970. However, the Royal New Zealand Navy abolished the practice as late as 1990. Source: East Imperial. As the production would be dry gin, they came up with the name “dry cat”. In the experimentation phase, professionals praised the gin, and the partners studied and improved in São Paulo. After that, the recipe underwent some small adjustments until the current formula for the delicious DryCat Gin was reached. They set up the first gin distillery in the state of Espírito Santo at the end of 2018, first on Santa Maria Island, then in the bohemian neighborhood of Jucutuquara. They then aroused the interest of a large investor, who is now part of the group of partners and arrived to boost national expansion. Gilberto Lopes for more than 30 years was in charge of Hortifruti, the largest fruit and vegetable chain in the country. A new, expanded and modernized structure in Monte Belo, facing the sea and with an immense horizon of possibilities.
