The Gospel Straight Rye Whiskey
Rye — Victoria, Australia
Reviewed October 21, 2021 (edited January 10, 2024)The more I taste, the more I appreciate it as a mixer; strong enough to punch through and add a signature note to drinks, a bit harsh on its own. -
Bought it because I haven't had an apple pie 'shine since I lived in the PNW and its abundance of apples and experimental liquors. It's too sweet for me straight, but as a mixer with sharper whiskeys, or with fresh squeezed lime juice, it works a fucking treat, and is deceptively smooth for how strong it is.

Tried it with just a couple drops of water. Nice smell but not really strong on the nose (whiskey glass, too). Sweet apple fruit up front. Quite smooth transition to a which heat is more spicy taste/feel than a alcohol burn. Then a few juice notes (maybe sherry?) bring us to the toffee/caramel finish which liiiingers. I think I prefer it without the water; seems to take the edge off that peppery / cinnamon-y bit? And I like that bit.

I'm a sucker for anything which gives grapefruit bitterness without sweetening it too much (or at all!) and this does just that. Works as an aperitif over ice (try shaking hard with a touch of lemon over small / crushed ice and serving in Martini glass), in a variant on the negroni, or with soda water.

Starts smooth and slow, with honey and caramel (reckon that's the oak) followed by the fruit and the sherry notes which carry the spice and burn, particularly cinnamon. Only got pepper and smoke hints on finish, which is plenty fine by me. As it opened up, got a lot more of the sweet red apple on the start.
