A different flavor profile than I am used to for a rum, instead is what i can only classify as a classic deconstructed apple pie. First impressions is a sweet notes of sauteed in butter apples at the point where they begin to brown on the edges and still have that fragrant apple taste. The med point is a bit of a surprise expecting a more alcoholic bite but no it smoothes right out into the spice part of the apple pie analogy. With clover, cinnamon, allspice, and the surprising caraway seed as the undertone flavor of it all. A very dinamic rum and definitely worth a dram pour. The Rum Bar

Ron Diplomático Ambassador Rum
Aged Rum — Venezuela
Reviewed January 18, 2024 (edited February 18, 2024)If i could clarify what a liquidfied bruleed banana tasted like i would tell someone to try this rum. Even the alcohol aspect of this rum tastes like a beautiful ripened banana for banana bread. Has a clean finish but do feel a numbing of my tongue so it could do well with a chilled glass. Would not recommend ice or water, I'd be worried it would dull the natural carmelized flavor of the rum. Absolutely delicious! -
TINCUP Fourteener Longs Peak (Release No. 1)
Bourbon — Indiana (bottled in Colorado), USA
Reviewed October 30, 2023 (edited October 3, 2024)Very nose forward whiskey with fresh cut wood (in particular, an aspen tree) and honey. Flavor is of caramel apple and loose leaf tobacco. Starts strong but soothes out on the end. I like the uniqueness of this being Coloradan and the 14er aspect. I do wish it got to be in the barrel a little longer, theres some upfront flavors that i think need to mellow that would make this whiskey really great. -
The nose is relatable to walking into an old candy shop, accompanied by dried fruits and rich leather couches. The pallet inspires me to make a dish that is carmelized pears with black pepper with some assistance of honey. The initial bite, however, is strong of cinnamon but quickly turns to sweet to calm the fire of spice. I really do love this bourbon for its fine line of simplicity and complexity in the way it is very much bourbon but different from the rest.

Abasolo Ancestral Corn Whisky
Corn — Mexico, Mexico
Reviewed October 14, 2022 (edited September 18, 2024)What I love about this whiskey is it has characteristics of moonshine and a reposado. The nose is very tequila reminiscent. It has that buttery popcorn start of a corn whiskey and a roasted marshmallow finish of a reposado. I do feel it would benefit greatly from a little longer in the cask, with some richer caramel and toffee tones. -
Writers' Tears Inniskillin Ice Wine Cask
Blended — Ireland
Reviewed May 4, 2022 (edited May 20, 2022)Has very characteristic notes similar to a scotch particularly those finished in a Sherry cask but has a nice Carmel apple finish and mouth feel you would get with the caramel.
