Reviewed December 8, 2020Spec’s Pick Nose: Warm and sweet. Like fresh strawberry jam still hot on the oven before being canned for the winter. Vanilla, honey, oak, brown sugar. Taste: Starts very sweet and slowly fades into a dry oak finish. Heat definitely follows the drink to the chest and sticks around for a moment. Wonderful complexity and flavor. Again, reminds me of a sweet berry jam on a piping hot piece of toast. 12.8.20. Neat. -

Reviewed November 29, 2020 (edited December 19, 2020)Nose: Warm, dark chocolate, cherry, licorice. very hot. Taste: Exactly like the nose. Warm feeling in the mouth with a lot of rich chocolate, cherry, and caramel once you get past the heat. Very good bourbon! This bottle has really opened up after breathing for a few weeks. Reviewed November 24, 2020 (edited November 25, 2020)Nose: Warm and sweet with a spicy cinnamon and just a touch of nutmeg. Black tea. Taste: Can’t quite put my finger on the tastes here. Not especially sweet. Not especially spicy. But a little bit of both. Warms my tongue immediately and finishes a bit dry. Very complex. I’ll have to come back to this one and note the flavors once I can pinpoint them more precisely. 11/24/20. Neat. -
Nose: Sweet, fruity. Orange zest and pear. warm banana pudding. Taste: Very light and friendly start that ramps up into an extremely smooth and delicate flavor profile of vanilla pudding and bananas with the smallest touch of white sugar. Just enough warmth in the finish to dry the palate slightly after the otherwise light and oily texture subsides. Neat. 11.21.20

Nose: The proof really comes through on the nose. Hotter than something like Stagg B14, for instance. The briney, Smokey, peaty, salty flavors you would expect jump out of the glass. I get a slight vanilla note on the nose through all the wonderful brine. Touch of bitter dark chocolate. Taste: Bold and flavorful. Packs a serious punch. The proof really shows up all the way through on the palate but not in such a way that flavors dissipate. Immediately I find a light, almost sweet, candied bacon flavor. Imagine candied bacon with enough candy flavor only to hold off the heavily peppered and spicy seasoning on bacon. Flavor starts to fade into a dry, minty, black coffee, leathery, sherry type flavor before finishing with a hot spice that’s not as sweet as cinnamon but not quite as hot as a habanero. All the while a fatty slab of brisket is practically dissolving on the back of your tongue. Flavor complexity is out of this world and absolutely a shining point of this whiskey. Neat. 11.10.20.
