Off a nose pour, this has an almost cinnamon smell at the start. It might have a hint of maltiness to the smell too. On first sip there is a ton of different flavors that rocks the palette. There is a major spice that carries through but in a good way. The finish is a bit longer than I would like. Overall, it is surprisingly good. The rye comes through and carries the day, but in a good way.

On the nose there is a swampy peaty smell that overwhelms the nostrils. After a bit there is a strong caramel smell that comes through. The taste awkwardly backs the smell up with peat that backs into a sweetness. It feels a bit thin in the mouth. The finish is almost non-existant. Overall, the peaty feel doesn't do well for me.

Southern Star Paragon Bottled in Bond Wheated Straight Bourbon
Bourbon — North Carolina, USA
Reviewed February 3, 2024 (edited March 8, 2024)Note this is a neck pour. Off first scent I got a touch of pickles, no idea where that came from. The more I smell it, even taking it to my wife the note is still pickles. All my wife smells is bourbon. Idk. After the offputting smell of pickles, the taste on initial taste backs that up. After that there is a really nice corn sweetness that comes through. There is definitely a dill after taste through it though. The finish is right where I want it to be, present but not overwhelming. I want to remember that I shouldn't drink too much of it. Overall, I think after the pickles it could be a nice whiskey. I hope this is just due to it being a neck pour, but it is not my jam with the dill and pickle flavors. Will come back to this soon to see if after the neck pour its better. I let it sit a bit and with some air it started to develop or move past the Rick... there are almost reallt subtle floral notes behind it which were really pleasant. -
Off the nose comes a sweetness, not much of a rye smell. On first sip, I got a strong apple flavor and then the spiciness of the rye. There is a sweetness hidden behind it. The finish has notes of a sour apple and isn't too harsh on the burn. Overall, this is a rye I could find myself drinking. I have determined I don't care much for rye with the exception of some finished ryes.

The nose is buttery and caramel forward. Sweet in general, much like normal Maker's. The taste is oak forward with a silky buttery texture. The caramel and vanilla sweetness comes in later. The finish has the oakiness present and isn't overwhelming. Overall, this is quickly becoming a favorite for me. It is sweet and buttery.32.0 USD per Pour

Nose pour in a highball. Nose has a slight spice with the caramel and vanilla behind it as a base. The taste is a smooth oak. It is sweet with caramel and vanilla coming through after a few sips. There is a bit of baking spice in there. The finish is pretty tame overall with the sweetness coming in. Overall... this is my type of whiskey. Boy is it smooth, very dangerous.189.99 USD per Bottle
