Tastes

Tried 3 different versions of this at drammers club. 4 year, 5 year, and 7 year. The 4 Year has notes of Spearmint, Marshmallow, Pepper, Caramel, Apple, Spicy finish, Floral, and dulce de leche. The 5 Year has notes of Vanilla, Floral, Caramel, Cloves, Dill, Pepper, Mint, Coconut, and Marshmallow. The 7 Year is 5 star worthy and has notes of Caramel, Chocolate, Floral, Mint, Dill, Pepper, Cinnamon, Cloves, Orange, Port, and a Spicy Finish. These all have bourbon/rye crossover noses, bourbon palates, and rye finishes.

My favorite compass Box to date. Strong on the sherry side with notes of chocolate, nuts, toffee, and cherries alongside some grain notes of toffee, pepper, coconut, and citrus with smoke from caol ila. Would love to try circus and general if I ever get the chance to do so.

2019 edition. This edition is more on th sherry side with notes of chocolate, treacle, raspberries, cherries, pepper, tropical fruit, and some smoke.

Nice dram that fits the bill between classic bourbon and sherry cask whisky with notes of caramel, corn, cotton candy, vanilla, chocolate, cherries, oak, and pepper.

Delectable dram with notes of mint chocolate, citrus, orange, vanilla, berry cobbler, peach, strawberry jam, and barley spices. Don’t know for sure but probably a bit above the old 12.

Amazing stuff with notes of berries, raisins, dried fruit, apricots, vanilla, orange, Christmas cake, chocolate, citrus, toffee, peppery and Christmas spices. Natural color.

Amazing stuff. Of course there’s salt, peat, and smoke, but also some rich and bold caramel, barbecue, ham, chocolate, orange, pepper, bacon, pineapple, floral, lemon, cherries, raisins, iodine, mackerels, and a unique sugar candy sweetness between demarara and maple.

Whisky Exchange Sample. Very floral and flagrant with notes of vanilla, caramel, white chocolate, plums, and raspberries.

Had this last night with a few of my instagram buddies. 57.4 abv, 252 bottles made, aged 3 years in bourbon casks then 4 years in oloroso sherry casks. Amazing stuff. Nose: Raisins, Chocolate, Toffee, Nuts, Tropical Fruit, Sultanas, Citrus, Pepper. Palate: Toffee, Citrus, Honey, Nuts, Spices. Finish: Chocolate, Nuts, Tropical Fruit, Spices, and a hint of vanilla.
