Cat Mezcal Joven

a very green and herbal beginning, followed by small hints of sweetness, lemon rind, and a hint of caramel nearer to the finish. The finish has a rubbery smoke, mild minerality but most notably a slight saltiness. The finish is long and Spicy, notably white pepper.
