Dulce Vida Blanco Tequila

Dulce Vida uses organic agaves from Los Altos (Highlands) near Nayarit. The piñas are autoclaved (cooked using a pressure cooker) for 20 hours after which they are crushed and shredded. The fibers are separated from the aguamiel (honey water) which is then fermented with proprietary yeast. The tequila is triple-distilled, is unaged, and is bottled at 100 proof.
Tequila BlancoDistilled from 100% blue Weber agave, it is typically unaged , clear, and bottled straight after distillation. Sometimes rested in stainless steel up to 60 days and can also be aged in wood for no more than 30 days.
"The nose tickles with white pepper heat, a slight sweetness and grassy-agave vegetal aromas. The sweet heat continues to the palate where it's joined by a reprise of the agave with a hint of minty citrus, all of which continue on the finish. Best with a splash of mineral water to tame the proof."
