Nose: Sweet apple crisp and soft wheat charred oak with hint of butter
Palate: it doesn’t have a soft mouth texture bit a lot of tart cherry flavors. Maybe a little too tart??
Finish: long finish, with some nuttiness but that tartness transcends into this spicy astingent flavor that is a little off putting
Thos was one of those batches that everyone was talking about so went out of my way to snag it. But for me, it doesnt scream a wheated high proof bourbon with some flavors that jist dont connect with me.

The nose is an immediate burst of charred oak and cinnamon, with cooked brown sugar, leather, followed by touches of vanilla and a little bit of molasses. These are usually quite simple upfront, giving you an indication of what the dominant flavors will be.
The palate is dry and immediately fills the mouth with charred oak and cinnamon, backed up by just a hint of cherry. The slight hints of fruit is pretty common when dealing with wheat. The spice soon tames allowing you to fully explore just how deep these flavors are. Oak gives way to vanilla smoothness with a touch of brown sugar adding just enough sweetness. The dryness helps to keep this from coming across as either too sweet or too smooth.
The finish is medium long and dry with lingering oak and cinnamon as creamy vanilla fades away.
First nosing is sweet vanilla buttercream and butterscotch. The butterscotch transfers to the palate followed by a light hint of honeyed fruit. Second nosing has some dark red fruit notes which transfer to the palate and mix with the butterscotch. Now I'm getting some peach, apricot, and some caramel cinnamon. It's amazing how much this has changed from when I first had it.
