It's really weird how much this one smells like Irish whiskey. There's that weird combination of apple and strong floral honey notes that characterizes Irish whiskey. The palate is a bit different, but it still definitely has 5hat strong floral element of Irish whiskey mixed with some honey and apple sweetness as well as cinnamon, ginger, and white pepper spice. This is a really interesting drink. It's kind of fun to sip, though if it were an Irish whiskey, I would mark it down for being slip-shod. That interesting combination of sweet, floral, savory, spicy, and earthy without being terribly smoky is surprising for a mezcal, but is quite tasty. It's very interesting and well worth giving a shot. It does seem though like it is playing out a gimmick for as long a sit can get away with it. The flavors are clear and tasty though, so it is quite good. Props to it also for not tasting like nearly as high of an ABV as it is. The umami has sort of a roasted chicken thigh with crispy skin flavor to it. This is weird, but it's also hedonistic for a mezcal and it nails its weirdness. That floral finish is really nice and while the drink lacks the smoothness and refined elegance of Bushmill's 21, this reminds me of the mezcal version of that, but with a bunch of mezcal elements and spiciness mixed with dirt. Yay?!
